Lamb and mash Potatoes with Lemon and Mint dressing
Ingredients:
- 20-25 new Potatoes
- 4 Lamb chops
- 1 large Lemon, juice and zest
- 15-20 Mint leaves, torn
- 4 tbsp Olive oil
- Salt and Pepper
Method:
- Boil the potatoes in salted water.
- Season the chops with salt and pepper.
- In a bowl, mix lemon zest and mint leaves with olive oil and season.
- When potatoes are tender, warm the oil mixture in a heavy based saucepan and as the oil starts to sizzle, add the lamb and cook for 2-3 minutes on each side.
- Remove the chops when almost golden and before the mint is burned.
- Add the juice of lemon to the pan to bubble for a few seconds.
- Crush the potatoes with a fork beside the steak, pour over the juices from the pan over the steaks and potatoes.
