Grilled Pork steak with Coconut Cream
Ingredients:
Marinade
- 3 cloves Garlic, crushed
- 3 tbsp Thai Fish sauce
- 1 tbsp light Soy sauce
- 100 ml Coconut Cream
- 1 tbsp Caster Sugar
- Black Pepper
- 200 ml boiling Water
Dip
- 2 Limes, juice
- 1 tbsp Thai Fish sauce
- 2 small Red Chilies, chopped
- 3 tbsp fresh Coriander, chopped
- 1 tbsp Caster Sugar
Method:
- To make the marinade; put garlic, fish sauce, soy sauce, coconut cream, sugar and 200 ml of boiling water in a blender and season with black pepper. blitz for a 30 second until a thin beige paste is formed.
- Marinate the steaks in the paste for 2 hours.
To make the sauce: mix lime juice with fish sauce, coriander, chilies and sugar in a small bowl.
- Grill the steaks until cooked, test by pushing a skewer into the middle of the meat and check there is no sign of blood.
- Serve the steak with the sauce and lime wedges.
