Chunks of Watermelon with Cheese, Honey and toasted Pine nuts
Ingredients:
- 1/2 medium Watermelon
- 50 g Feta Cheese
- 2 tbsp runny Honey
- 2 tbsp Pine nuts, toasted
- A handful of fresh Mint leaves, chopped
Method:
- Cut the rind of the watermelon, then cut into chunks.
- Arrange the chunks on a platter and crumble the cheese over the watermelon.
- Drizzle with honey, then scatter the nuts and mint leaves over the watermelon.
