Chicken breast with grilled Pancetta and Peas
Ingredients:
Chicken
- 4 Chicken breast, boneless
1 tbsp Olive oil
8 slices Pancetta, grilled and crispy
Salt and Pepper
Peas
- 350g frozen Peas
- ½ Butterhead Lettuce, finely shredded
- 25g Butter
- 1 small Onion, finely chopped
- 2 Garlic cloves, crushed
- 1 tbsp Horseradish cream
- 2 tsp White Wine
- 150ml double Cream
- 1 tsp Caster Sugar
- Salt and Pepper
Method:
- For the peas, Fry onion and garlic gently with the butter until softened.
- Stir in the horseradish, wine and cream and simmer for 3 minutes.
- Add the lettuce, peas and sugar. Stir and season with salt and pepper. Simmer for a another 5 minutes. Keep the peas warm.
- Brush the chicken fillets with olive oil, season and pan fry until cooked through( the juices should run clear).
- Serve the chicken with Pancetta on top and the peas.
