Salmon and Cucumber sandwich with Creme and pickled Spinach
Ingredients:
- 2 slices of multi grain Bread
- 2 slices of smoked Salmon
- 4 strips of Cucumber
- 1 spring onions
- 1/2 Lemon, juice
- 2 tbsp of Cream Fraiche/ Mayonnaise
- A handful of pickled baby Spinach leaves
- 1 tsp Olive oil
- Salt and Pepper
Method:
- Mix chopped spring onion with cream, mayonnaise and lemon juice in a small bowl.
- Drizzle the spinach with olive oil in a different bowl and season.
- Place a spoonful of the cream mixture on one slice of bread, top with a handful of spinach, salmon and cucumber.
- Top with the other slice of bread.
