Salmon fillet with Goat cheese and Sun-dried tomatoes
Ingredients:
- 1 whole fillet of Salmon ( 1.4 kg)
- 1/2 Lemon, juice
- 300 g soft Goat Cheese
- 4 tbsp Sun-dried Tomato paste
- 50 g Bread crumbs
- 25 g Parmesan, grated
- 2 tbsp Olive oil
- Ground Pepper
Method:
- Preheat the oven to 230 C/ Gas mark 8.
- Put salmon skin-side down on a non stick baking sheet, squeeze lemon juice over it and season with pepper.
- Spread goat cheese and tomato paste over the fish evenly.
- Mix bread crumbs with parmesan and sprinkle over the fish
- Drizzle with olive oil and cook for 20 minutes or untilfish is cooked and the flesh is opaque.
- Serve the salmon with lemon wedges and a green salad.
