I’ve been very busy lately what with all the going back to school thing and yes, I have finally done it :-) you are now looking at a brand new dental student:-)It’s all been very exciting to say the least and its still sinking in, even though I was expecting it from almost 6 month ago! The course I am studying is designed as an intensive course which means it requires more work than the usual and it has been taking up all my time but hopefully it will all worth it at the end and no one will end up with a Dentist like this one. So I had to take a break from cooking new and exciting things and stick with the simple, easy and mainly boring foods and as you may imagine I am looking forward to spend a couple of hours in the kitchen and cook something new:-)
I have been feeling a bit poorly since yesterday and decided to cook a simple healthy soup and came up with this recipe. I would have liked to add some potatoes to it as well but my new healthy diet is strictly potato free so we’ll see how it goes. I used dry mint in this recipe which I think gives a more intensive flavour especially when cooked with garlic. Hope everyone enjoys it, I’ll be back soon hopefully with some exciting new recipes:-)
