Thinking about: What summer is like?

Hard to believe it is July! Sorry but I have to moan about the weather! Its now been raining constantly for 3 days. Today is more like a grim November day than July and more bad weather to come!

We decided not to take any holidays this summer as we now live in beautiful  West country. I dreamed about taking long walks in the woods and sunbathing on quiet and peaceful beaches this summer without need to fly to a different country. That hasnt happened yet!

So you may wonder how I coup with this S*&%^$ weather? well, I cook, eat and browse food photos:-) I found this recipe in an issue of GOODFOOD magazine from last year and baked it a few times since. When I baked it a few days ago, I took photos so now I can post it here. It is very easy to make and taste great.

The combination of fresh strawberries and crisp pastry really works.

Thinking about: A weekend of baking

This is a healthy and vegetarian version of classic chicken korma which is a favourite in our house. I love Indian food and cant get enough of all the lovely and aromatic spices used in Indian cooking. Although I love spicy food I try to go for milder versions which are kinder to stomach and more agreeable to Hubby’s palate:-) I love this version of korma because its easy to cook and very light. We have it with aromatic basmati rice or fresh naan bread and some yogurt on the side. I used frozen vegetables in this recipe which you can substitute with verity of fresh vegetables. Potato cubes would also go well with this as it can make the sauce thicker however without potatoes it is a lighter dish. You can also add red chilli for extra flavour. Enjoy:-)

Thinking About: Cleaning Up

Since I’ve decided to lose a bit of a weight before our holiday mid March, my craving for sugary and fatty food has increased a lot, typical isn’t it?:-) So yesterday I finally gave up and decided to bake something very sweet and I am glad I did as the resulting cake turned out much better than expected.

I looked in my Slater book for inspiration and found a recipe for Plum cake. Since I didn’t have some of the ingredients needed in the recipe including fresh plums, I went for canned peaches and had to replace most of what was needed such as golden sugar and ground almond and came up with my own version.


Peach slices sank into the cake as it start to bake.


The cake was soft inside and crunchy outside, moist and sweet. Coupled with a nice cup of tea, it was all we needed on a Sunday afternoon:-)
