Thinking about: A weekend of baking

This is a healthy and vegetarian version of classic chicken korma which is a favourite in our house. I love Indian food and cant get enough of all the lovely and aromatic spices used in Indian cooking. Although I love spicy food I try to go for milder versions which are kinder to stomach and more agreeable to Hubby’s palate:-) I love this version of korma because its easy to cook and very light. We have it with aromatic basmati rice or fresh naan bread and some yogurt on the side. I used frozen vegetables in this recipe which you can substitute with verity of fresh vegetables. Potato cubes would also go well with this as it can make the sauce thicker however without potatoes it is a lighter dish. You can also add red chilli for extra flavour. Enjoy:-)

I like this too. very healthy indeed. for some reason I always liked to have nuts in food. I don't know if it the nuts, the food or the combination of the too, whatever it is I just love it.... I must be hungry ....
